NSTANT POT BEETS WITH  LIME HOT HONEY VINAIGRETTE

 

1 bunch                    Baby Read Beets

1 bunch                    Baby Golden Beets

1 1/2 Cups                Water

 

3                              Limes, Juiced 

3 Tablespoons        Hot Honey

1 Cup                       Olive Oil

1 Tablespoon           Maldon Sea Salt

 

1/2 Cup                    Toasted Sunflower Seeds

1/4 head                   Radicchio (separated into leaves)

Handfull or 2            Baby Kale

1/4 Cup                     Shaved Pecorino Romano

 

 

Wash the beets. 

 

Put them in the instant pot//multicooker//pressure cooker on a rack with the water in the pot. 

 

Cook, HIGH pressure, 30 minutes. 

 

Release the pressure, test the beets. If they aren’t done. Cook them more. 5-10 more minutes high pressure will do the trick. 

 

Peel the beets and let them cool. 

 

 

Mix the lime juice and hot honey. Whisk in the olive oil. That’s the HOT HONEY LIME VINAIGRETTE!

 

Cut the beets into wedges or quarters or whatever you think looks nice, and is bite size-ish. 

 

Put the beets on a plate//platter//bowl. 

 

Season with salt. 

 

Spoon a good amount of the vinaigrette on the beets, so they are covered and have a little puddle of the vinaigrette at the bottom of the bowl//platter//plate. 

 

Then add the sunflower seeds, radicchio, baby kale in layers over the beets and shower with more vinaigrette. 

 

Shave the pecorino on top. 

 

SALAD! 

 

BONUS: add fresh mint if you got it.
